On how you get the info in order to populate this inventory?
Start with your data stewards, if you have any. If not, first approach the business leads from your different data domains or departments. You can also reach out to procurement on what services/products were employed by your organization as another good lead.

Do you have a step by step Msp project plan on how you get this information?

This is very helpful when starting with the inventory. Maybe adding a row for system integrators might be helpful. System integrators often have a good overview on the system and the individual settings. In case of adaptations or even implementation of additional applications, they could be consulted.
